Summer is finally here, bringing long days, radiant sunshine and, let's be honest, those intensely hot hours when all we want to do is stay close to a fan.
When temperatures rise, our bodies crave hydration and light meals. But who says healthy eating has to be boring? Today, we're sharing 3 fresh, original and healthy recipes where our fruit desserts (with no added sugars, preservatives or artificial colours) take centre stage in the kitchen.
1. Strawberry Gazpacho with Anela Apple-Banana
Gazpacho is the undisputed king of summer dishes, but adding a fruity twist takes it to a whole new level. The acidity of the tomatoes combined with the natural sweetness of apple and banana creates the perfect balance without the need for juices or artificial sugars.
Ingredients: 4 ripe tomatoes, 1/2 green pepper, 1/4 cucumber, 1 pot of Anela Fruits Apple & Banana, 100 g fresh strawberries, a drizzle of extra virgin olive oil, a pinch of salt and a splash of apple cider vinegar.
Method:
Wash and chop all the vegetables and strawberries.
Place everything in a blender together with the Anela Fruits pot.
Blend at high speed until smooth and homogeneous.
Add the olive oil, salt and vinegar to taste, then blend for another minute.
Chill in the refrigerator for a couple of hours before serving.
The Anela touch: Serve in glasses topped with a fresh mint leaf. A refreshing starter packed with antioxidants!

2. Apple & Strawberry Ice Pops with Crunchy Chocolate Coating
Forget industrial ice pops loaded with syrups and artificial colourings. These ice pops are a nutritional powerhouse and a hit with both children and adults.
Ingredients: 2 pots of Anela Fruits Apple & Strawberry (or your favourite flavour combination), 1 tablespoon chia seeds, 50 g dark chocolate (minimum 85% cocoa), and 1 teaspoon coconut oil.
Method:
Mix the Anela Fruits pots with the chia seeds in a bowl (this adds texture and an extra boost of Omega-3).
Pour the mixture into ice-pop moulds and insert wooden sticks.
Freeze for at least 4 hours.
Once frozen, melt the dark chocolate with the coconut oil in the microwave (30-second intervals to avoid burning).
Remove the ice pops from the moulds and dip the tips into the melted chocolate. It will harden instantly, creating an irresistible crunchy coating.

3. Creamy Tropical Mango, Apple & Coconut Ice Cream
This creamy ice cream is set to become the healthy ice cream trend of the summer: made entirely from fruit, dairy-free and with no added sugars, yet incredibly creamy.
Ingredients: 2 bananas cut into small pieces and frozen beforehand, 1 pot of Anela Fruits Apple & Mango, 2 tablespoons coconut milk (the thick part from the can), and grated coconut for decoration.
Method:
Remove the banana pieces from the freezer about 5 minutes before starting.
Place the frozen bananas, the Anela Fruits Apple & Mango pot and the coconut milk in a powerful blender or food processor.
Blend until you achieve a creamy texture similar to artisan ice cream (if necessary, add a splash of plant-based milk).
Serve immediately in a bowl and decorate with grated coconut and a few basil leaves.
